Is there any legitimate reason that anyone knows of for people to set their MX records like this?

Before noticing this behavior from spammers I was thinking of creating something like nospam.tee.gr with its MX set to localhost. That way when posting to lists or the USENET, harvest robots would create lists that pointed to 127.0.0.1 while people would know where to send mail. Then I thought that most propably the spammer harvesting robots remove "nospam", "removeme" and the other hacks from the addresses they find anyway and did not continue on that direction.

I am toying arround with the idea of having nospam.tee.gr have an existing machine as its MX and that machine either refusing connections, or simply sending everything to /dev/null.
